The Rainbow egg and additional hatches are more expensive because you have an option to get early access to new animals that have not been added to regular eggs yet. Animals from the rainbow egg will eventually be added to one of the regularly rotating Eggs! And as always, these Eggs do have a reduced cost once all the Animals have been hatched.
